3 ½ T. extra virgin olive oil
1/2 of a large sweet onion, chopped (about 1 cup)
2 and ¼ cups sliced mushrooms
2 teaspoons minced garlic
1 large or two small stalks celery, diced
2 teaspoons dried sage
1 teaspoon dried rosemary
¼ teaspoon thyme
cracked black pepper
1 ½ T. aged balsamic vinegar
4 cups Oganic Bread of Heaven Sourdough Croutons
1 large handful spinach, chopped
1 2/3 cup no salt added corn stock (or veggie stock of your choice).
Preheat oven to 350 F., Spray a small 8 inch casserole with non stick spray
In a very large skillet, sauté onions and mushrooms until they start to soften (5 minutes). Add garlic, celery, and herbs and cook until the mushrooms are golden brown (8-10minutes), adding cracked pepper to taste. (I did not use salt, but feel free to add)
Deglaze the pan with the balsamic, add the bread and spinach and stir to coat, until spinach wilts (about a minute). Add a cup of the broth and stir.
Transfer to the casserole, drizzle with remaining stock, making sure all bread cubes are moistened. Bake 25 minutes. Serves 6-8
