Roasted Vegetable Soup

What I love about cooking is almost every recipe I find, I can easily adjust it to fitting within our household needs so if something doesn’t fit in this recipe for the way your family eats, change it up.

On a sheet pan roast your veggies of choice.

For this recipe I chose carrots, celery, tomatoes, sweet potatoes, onion, garlic, bell peppers and zucchini tossed with avocado oil, salt, pepper and granulated garlic. (You can make extra of this and freeze for future soups).

After they have roasted for about 30 minutes remove and blend with a cup of water or bone broth.

Once you have pureed the vegetables add to a pot and add water or bone broth to the preferred consistency. I added bone broth to this recipe.

I season with my heart, then test, and add what I feel needs to be added still.

In this recipe I added the following:

Thyme

Marjoram

Salt

Pepper

Basil

Oregano

Paprika

Let simmer for 30 minutes.

We used a pack the paleo Chicken sausages from Costco. You can change that to many different options. I have also used chicken Italian sausage that we get from a local farmer and ground beef.

Let simmer for another 30 minutes.

You can add kidney beans and/or white navy beans to this recipe as well. I have done that, and it reminds me of Pasta e Fagioli but didn’t prepare a pot of them prior to making this soup. If you are not diary free a little bit of heavy cream or freshly grated parmesan cheese is a great touch.

Lastly, I add the Organic Bread of Heaven sourdough noodles. I have used various kinds for our soups. You can use whatever your family favors. Watch closely but typically about 15 to 20 minutes to simmer.

Remove from heat and enjoy. You can serve with Organic Bread of Heaven Sourdough Toast and add garlic butter or sourdough dinner rolls. The options are endless with all their amazing items to choose from.
