Summer Pesto & Mushroom Pasta Salad Recipe

This pasta salad has a very complete flavor profile, blending the beautiful taste of pesto and mushrooms with a hint of basil. A flavor that any Italian will love!

1 – 4 oz. mushrooms, sliced
2 large cloves garlic, crushed
1 pkg of Organic Bread of Heaven Sourdough Corkscrew Pasta
1/8 c. olive oil
1 tbsp dried basil
1 cup fresh spinach, packed
freshly ground back pepper, lots
1 cup shredded cheese of your choice
3 tbsp mayonnaise
2 tbsp warm water

Cook Pasta to al dente, which is typically 5-8 minutes once the pasta is added to the boiling water.

Drain pasta and toss with 1 tbsp of olive oil to cool while making dressing.

Saute garlic, mushrooms, and spinach in a skillet over medium heat.

Combine pasta, sauteed veggies, black pepper, shredded cheese, mayonnaise, and warm water together in one bowl.

Serve after chilling for a few hours or serve warm.
