New Recipe!! Garden Gazpacho Salad – Featuring Sprouted Sourdough Corkscrew Pasta!!

You’ll LOVE this Pasta Salad for a quick and well balanced Complete Meal or as a side dish!

Ingredients:
1 8 oz pkg Organic Bread of Heaven Sprouted Sourdough Fusilli or Corkscrew Pasta
1 cup Chopped Chicken or Substitute of your choice
1/2 cucumber, chopped
1 very small or 1/2 red bell pepper, chopped
1 small tomato, chopped
1/4 cup red onion, chopped
1/2 cup tomato juice (We use fresh tomatoes blended in our vitamix)
1/8 cup lemon juice
1/4 tsp black pepper
1/4 tsp sea salt

Boil salted water in a medium-sized pot. Add pasta and cook until well done (5-8 minutes), then drain in a colander.

Combine the pasta with the red onion, tomato, bell pepper, cucumber, and chicken. Pour lemon juice and tomato juice over the salad, stirring carefully til pasta is coated. Season with salt and black pepper. Serve chilled or warm!
